Fresh-picked sweetcorn is a true summer treat—sweet, juicy, and bursting with flavor. Whether you’re after fast weekday meals or crowd-pleasing sides for your next barbecue, these recipes let your homegrown corn shine!


1. Classic Boiled Sweetcorn on the Cob

Ingredients:

  • Fresh sweetcorn cobs, husked
  • Butter (optional)
  • Salt

Instructions:

  1. Bring a large pot of water to a boil (no salt!).
  2. Add cobs and cook for 3–5 minutes until just tender.
  3. Remove with tongs, slather with butter and sprinkle with salt. Serve hot.

2. Grilled Sweetcorn with Lime & Chili

Ingredients:

  • Sweetcorn cobs in husks
  • Butter
  • Fresh lime
  • Chili powder or smoked paprika
  • Salt

Instructions:

  1. Soak corn (in husks) in water 10 minutes.
  2. Grill over medium-high heat, turning, 10–15 minutes.
  3. Peel back husks, brush with butter, squeeze lime, sprinkle with chili and salt. Serve.

3. Sweetcorn Fritters

Ingredients:

  • 2 cobs sweetcorn (kernels sliced off)
  • 1 egg
  • 2 tbsp flour
  • 2 tbsp chopped spring onion
  • Pinch salt, pepper
  • Oil for frying

Instructions:

  1. Mix corn, egg, flour, onion, salt & pepper.
  2. Heat oil in pan, spoon batter into small rounds.
  3. Cook 2–3 mins per side till golden. Serve with salad or as a brunch side.

4. Creamy Sweetcorn Chowder

Ingredients:

  • 2 cobs sweetcorn (kernels and cobs)
  • 1 onion, chopped
  • 1 potato, diced
  • 2 cups vegetable (or chicken) stock
  • 1 cup cream or milk
  • 1 tbsp butter
  • Salt & pepper

Instructions:

  1. Sauté onion and potato in butter till soft.
  2. Add kernels, stock, simmer 10 mins.
  3. Add cobs for extra flavor, simmer 5 mins, remove cobs.
  4. Blend some soup for creaminess, add milk/cream, season to taste.

5. Mexican Street Corn (Elote)

Ingredients:

  • Grilled corn cobs
  • Mayonnaise
  • Cotija cheese or feta, crumbled
  • Chili powder
  • Fresh lime

Instructions:

  1. Brush hot corn with mayo, sprinkle cheese and chili powder.
  2. Finish with a squeeze of lime.

6. Sweetcorn Salad

Ingredients:

  • Cooked sweetcorn kernels
  • Cherry tomatoes
  • Red onion
  • Fresh cucumber
  • Lime juice
  • Olive oil
  • Coriander or parsley

Instructions:

  1. Mix all ingredients, dress with oil and lime, season to taste. A perfect barbecue or picnic side!
