  • 1 cup (240ml) water
  • 1 cup (200g) sugar
  • 2–3 tablespoons dried culinary lavender (or 1/4 cup fresh, loosely packed)
  • 1 cup (240ml) fresh lemon juice (about 4–6 lemons)
  • 4 cups (950ml) cold water to dilute
  • Lemon slices, ice, and fresh lavender sprigs for garnish

Instructions

  1. Combine water and sugar in a saucepan, bring to a simmer to dissolve sugar.
  2. Remove from the heat, stir in lavender, cover, and steep for 30 minutes.
  3. Strain out lavender buds, cool syrup.
  4. Combine lavender syrup with lemon juice in a pitcher.
  5. Add cold water, stir, and serve over ice with lemon slices and a lavender sprig.
