    The corn silks on each ear will turn brown and dry out—usually 18–24 days after silks first appear.
  • Feel the Cobs:
    Gently squeeze an ear; it should feel full, firm, and rounded, not thin or underfilled.
  • The Fingernail Test:
    Peel back the husk just enough to reveal a few kernels, then press with your fingernail:
    • Milky juice means perfect sweetcorn—pick and eat right away!
    • Clear, watery juice? Wait a bit longer.
    • No juice or tough kernels? It’s overripe.

What Time of Day to Harvest

  • Early Morning:
    For the juiciest, sweetest corn, pick early in the day when the sugars are at their peak. If harvesting later, chill cobs quickly in cold water or the fridge.
