What Is Veggie Chilli Con Carne?

Veggie chilli con carne (often called vegetarian chilli) uses plant-based ingredients to create the same depth and comfort as traditional chilli.

It’s typically made with:

  • Mixed beans or lentils
  • Tomatoes
  • Onions and garlic
  • Peppers and vegetables
  • Classic chilli spices

Slow cooking and good seasoning do the heavy lifting.

What Does Veggie Chilli Taste Like?

A good veggie chilli should be:

  • Rich and savoury
  • Gently warming rather than fiery
  • Thick and hearty
  • Slightly sweet from tomatoes
  • Packed with spice and texture

Done well, it’s just as satisfying as meat-based chilli.

Veggie Chilli Con Carne Recipe (UK Style)

Ingredients (Serves 4–6)

  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red pepper, diced
  • 1 carrot, finely diced
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp ground coriander
  • 1–2 tsp chilli powder (to taste)
  • 1 tsp dried oregano
  • 2 tbsp tomato purée
  • 2 × 400 g tins chopped tomatoes
  • 1 × 400 g tin kidney beans, drained
  • 1 × 400 g tin black beans or mixed beans, drained
  • 200 ml vegetable stock
  • 1 tsp sugar or maple syrup
  • Salt and black pepper, to taste

Optional extras (for extra depth):

  • 1 × 400 g tin green or brown lentils
  • 150 g mushrooms, finely chopped
  • ½ tsp cocoa powder
  • Sweetcorn or courgette

Method

1. Build the Base

Heat the oil in a large pan over medium heat.
Add the onion and cook for 8–10 minutes until soft and lightly golden.

Add garlic, pepper, and carrot. Cook for 3–4 minutes.

2. Add the Spices

Stir in cumin, smoked paprika, coriander, chilli powder, and oregano.
Cook for 1–2 minutes until fragrant — this step is key for flavour.

3. Add Tomatoes and Beans

Stir in the tomato purée, chopped tomatoes, vegetable stock, beans, sugar, and any optional extras.

Bring to a gentle simmer.

4. Simmer Slowly

Reduce heat and simmer uncovered for 40–60 minutes, stirring occasionally, until thick and rich.

Add a splash of water if it becomes too thick.

5. Season and Rest

Season with salt and pepper.
Let the chilli rest for 10–15 minutes before serving — flavour improves as it sits.

How Spicy Is This Veggie Chilli?

As written, it’s medium heat.

To adjust:

  • Mild: Reduce chilli powder
  • Hot: Add extra chilli powder or fresh chilli
  • Smoky: Add chipotle or extra smoked paprika

Heat is easy to customise.

Best Beans for Veggie Chilli

Great options include:

  • Kidney beans
  • Black beans
  • Pinto beans
  • Mixed beans
  • Lentils

Using more than one type adds texture and interest.

What to Serve With Veggie Chilli

Classic pairings:

  • Steamed rice
  • Jacket potatoes
  • Tortilla chips or nachos
  • Cornbread
  • Soft wraps

Toppings:

  • Sour cream or dairy-free yoghurt
  • Avocado
  • Fresh coriander
  • Lime wedges

Is Veggie Chilli Healthy?

Yes — veggie chilli is naturally nutritious.

It’s:

  • High in fibre
  • Rich in plant-based protein
  • Low in saturated fat
  • Filling and satisfying

It’s a great everyday, budget-friendly meal.

Does Veggie Chilli Freeze Well?

Very well.

  • Fridge: Up to 4 days
  • Freezer: Up to 3 months

It often tastes even better after reheating.

Common Mistakes to Avoid

  • Not simmering long enough
  • Skipping spice blooming
  • Using too much liquid
  • Under-seasoning at the end

Low and slow makes better chilli.

Final Thoughts

Veggie chilli con carne is hearty, comforting, and full of bold flavour — even without meat. With the right spices and a little patience, it’s a dish that pleases vegetarians and meat-eaters alike.

Perfect for cosy nights, batch cooking, and stress-free dinners.
