Making Garlic Powder and Granules at Home

Garlic powder and granules are kitchen staples, but nothing beats the bold, aromatic flavor of homemade! Making your own lets you control freshness, avoid additives, and use up any leftover or undersized cloves. Here’s how to turn homegrown or store-bought garlic into shelf-stable, powerful flavor for every recipe.

Why Make Your Own?

  • Fresher and more pungent than store-bought
  • No salt, caking agents, or fillers
  • Reduces waste—uses small or less-than-perfect bulbs
  • Cost-effective and keeps for months

What You’ll Need

  • Fresh garlic bulbs (as many as you have room to dry)
  • A sharp knife or mandoline
  • Dehydrator, or oven with a low setting
  • Food processor, blender, or spice/coffee grinder
  • Airtight jars for storage

How to Make Garlic Powder and Granules

1. Prep and Dry the Garlic

  • Peel garlic cloves and slice thinly (about 1–2 mm thick).
  • Dehydrator: Spread slices in one layer, dry at 55–65°C (130–150°F) for 8–14 hrs.
  • Oven: Place slices on parchment-lined trays. Set oven to lowest temp (prop door open slightly for airflow). Dry until brittle—4–8 hrs.

2. Cool and Grind

  • Let dried garlic cool fully.
  • For garlic granules: Pulse dried slices in a food processor or grinder until you get coarse bits.
  • For garlic powder: Keep grinding until you have a fine, smooth powder. Sift to remove any remaining larger bits.

3. Store Properly

  • Pour into airtight glass jars or spice containers. Keep in a cool, dry, dark spot.
  • Label & date. Best used within 6 months for most intense flavor.

Pro Tips

  • Don’t use moldy or soft cloves—dryness and cleanliness = longevity.
  • Don’t dry whole cloves; slicing increases surface area for faster, better drying.
  • Garlic powder cakes easily; add a few grains of uncooked rice to absorb moisture.

How to Use

  • Sprinkle in rubs, dressings, marinades, soups, roasted veg, or anywhere a garlic boost is needed.
  • Use granules for crunch or powder for fast, even flavor.

Wrapping Up

Homemade garlic powder and granules are a great way to preserve your garlic crop and bring incredible flavor to your kitchen all year. It’s easy, rewarding, and unbeatable in taste!
