  • 500–600g fresh August berries
  • 100g sugar
  • 1–2 tbsp flour or cornflour
  • Ready-rolled or homemade shortcrust pastry
  • 1 egg (for glazing)

Method:

  1. Toss berries with sugar and flour.
  2. Line a pie dish with pastry, tip in berries. Cover with pastry lid, seal and crimp edges.
  3. Cut a few small vents, brush with beaten egg.
  4. Bake at 190°C (170°C fan)/375°F for 35–45 minutes, until golden and bubbling.
  5. Rest briefly before slicing.
