Ingredients (Serves 2–3)

  • 300g broad beans (fresh podded or frozen)
  • 1 tbsp olive oil or butter
  • 1 garlic clove, finely chopped
  • Zest of ½ lemon
  • Salt and black pepper, to taste
  • Optional extras: fresh mint, parsley, grated parmesan, chilli flakes

How to Cook Broad Beans

Step 1: Cook the Broad Beans

  • Fresh broad beans: Boil for 3–4 minutes
  • Frozen broad beans: Boil for 3–5 minutes

Drain well.
If the beans are large, gently slip off the outer skins for a softer texture.

Step 2: Sauté

Heat the olive oil or butter in a pan over medium heat.
Add the garlic and cook gently for 30–60 seconds (do not brown).

Step 3: Combine

Add the cooked broad beans to the pan.
Toss gently for 2–3 minutes until heated through.

Step 4: Finish

Remove from heat and stir in:

  • Lemon zest
  • Salt and pepper

Taste and adjust seasoning.

Optional Add-Ins (Highly Recommended)

  • Fresh mint or parsley – classic pairing
  • Grated parmesan or pecorino – adds richness
  • Chilli flakes – gentle heat
  • Lemon juice – extra freshness

Serving Ideas

This broad beans recipe works brilliantly:

  • As a side dish with fish or chicken
  • Tossed through pasta or risotto
  • Added to salads or grain bowls
  • Mashed lightly on toast with olive oil and lemon

Tips for the Best Broad Beans

  • Smaller beans = sweeter flavour
  • Don’t overcook — they should be tender, not mushy
  • Double-podding larger beans improves texture
  • Butter gives richness, olive oil keeps it light

Final Thoughts
