Ingredients (Serves 4–6)

Base

  • 1 tbsp olive oil
  • 2 large onions, finely chopped
  • 3 cloves garlic, minced
  • 1 red pepper, diced

Meat

  • 1 kg beef mince (10–15% fat for best flavour)

Spices

  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp ground coriander
  • 1–2 tsp chilli powder (to taste)
  • 1 tsp dried oregano

Sauce

  • 2 tbsp tomato purée
  • 2 × 400 g tins chopped tomatoes
  • 300 ml beef stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp sugar or honey

Beans

  • 2 × 400 g tins kidney beans, drained and rinsed

To Season

  • Salt and black pepper, to taste

Method

1. Soften the Onions

Heat the oil in a large, heavy-based pan over medium heat.
Add the onions and cook for 8–10 minutes until soft and lightly golden.

Add the garlic and cook for 1 minute until fragrant.


2. Brown the Beef

Increase the heat slightly and add the beef mince.
Cook until fully browned, breaking it up with a spoon.
Season lightly with salt and pepper.


3. Add the Spices

Stir in cumin, smoked paprika, coriander, chilli powder, and oregano.
Cook for 1–2 minutes to release the flavours.


4. Build the Sauce

Add the tomato purée and cook briefly.
Pour in the chopped tomatoes, beef stock, Worcestershire sauce, and sugar.

Stir well and bring to a gentle simmer.


5. Slow Cook

Reduce the heat and simmer uncovered for 45–90 minutes, stirring occasionally, until thick and rich.

If the sauce becomes too thick, add a splash of water or stock.


6. Add the Beans

Stir in the kidney beans and cook for a further 15–20 minutes.

Taste and adjust seasoning as needed.
