Ingredients:-
- 4 eggs
- 375g caster sugar
- 400g pumpkin purée
- 350ml vegetable oil
- 375g plain flour
- 2 teaspoons bicarbonate of soda
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 325g chocolate chips
Method:-
Preheat oven to 200 C / Gas 6.
- Line 2 12 case muffin tins with paper cases.
- In a large bowl mix together the eggs, sugar, pumpkin purée and the oil.
- In a medium bowl mix the flour, bicarb, baking powder, cinnamon and salt
- Mix the medium bowl mixture in with the egg mixture (large bowl).
- Fold in the chocolate chips.
- Spoon into the muffin cases – do not over fill
- Bake the muffins in the preheated oven 15 to 20 minutes, or until a skewer inserted in the centre comes out clean.
- Take the muffins from tins, and cool them on a wire rack and then you can taste them
